Quinoa Mushroom Salad

Ingredients:

  • Boiled Quinoa-30gm
  • Mushroom-100gm
  • Blanched Broccoli-20gm
  • carrot-10g
  • onion-10g
  • tomato-10gm
  • Capsicum-10gm
  • Cucumber-10gm
  • Olive oil-5gm
  • Lime juice-2 tbsp
  • Mint leaves-1 tbsp
  • Chili flakes- ½ tsp
  • Oregano-½ tsp
  • salt-as per taste

Method:

  • For Dressing, in a bowl add curd olive oil, lime juice, salt, chilli flakes, and oregano and mix well and keep it aside.
  • Take a pan, add 1 spoon of oil, add garlic and mushrooms to it, and sauté on low flame for 4-5 minutes. Keep it aside. 
  • In a large bowl add boiled quinoa, mushroom, and all the sliced veggies, and mint leaves.
  • Now add the dressing to the quinoa bowl and toss the salad well.
  • Transfer into a serving bowl and serve immediately.
