Quinoa Mushroom Salad
Ingredients:
- Boiled Quinoa-30gm
- Mushroom-100gm
- Blanched Broccoli-20gm
- carrot-10g
- onion-10g
- tomato-10gm
- Capsicum-10gm
- Cucumber-10gm
- Olive oil-5gm
- Lime juice-2 tbsp
- Mint leaves-1 tbsp
- Chili flakes- ½ tsp
- Oregano-½ tsp
- salt-as per taste

Method:
- For Dressing, in a bowl add curd olive oil, lime juice, salt, chilli flakes, and oregano and mix well and keep it aside.
- Take a pan, add 1 spoon of oil, add garlic and mushrooms to it, and sauté on low flame for 4-5 minutes. Keep it aside.
- In a large bowl add boiled quinoa, mushroom, and all the sliced veggies, and mint leaves.
- Now add the dressing to the quinoa bowl and toss the salad well.
- Transfer into a serving bowl and serve immediately.
