Millet Curd Rice
Ingredients:
- Foxtail millet-50 gm
- curd-100 gm
- cucumber- 20gm
- carrot – 20gm
- onion-20gm
- coriander leaves- 1 tbsp
- curry leaves- 5
- mustard -½ tsp
- chilli-1
- oil-5gm
- salt-as per taste

Method:
- Wash and soak the millet for 3-4 hours.
- Add soaked millet and 200ml water to a pressure cooker and cook it on a medium flame for 3 whistles.
- Once the millets are cooked, let it rest for some time before adding curd.
- Now add curd chopped veggies and salt to the cooked millet and mix well.
- For tempering, in a hot pan add oil, mustard seeds, chili, curry leaves and sauté for a minute. Pour the tempering into the millet curd mixture and combine well.
- Millet curd rice is ready to serve.
