Millet Curd Rice

Ingredients:

  • Foxtail millet-50 gm
  • curd-100 gm
  • cucumber- 20gm
  • carrot – 20gm
  • onion-20gm
  • coriander leaves- 1 tbsp
  • curry leaves- 5 
  • mustard -½ tsp
  • chilli-1
  • oil-5gm
  • salt-as per taste

Method:

  • Wash and soak the millet for 3-4 hours.
  • Add soaked millet and 200ml water to a pressure cooker and cook it on a medium flame for 3 whistles.
  • Once the millets are cooked, let it rest for some time before adding curd.
  • Now add curd chopped veggies and salt to the cooked millet and mix well.
  • For tempering, in a hot pan add oil, mustard seeds, chili, curry leaves and sauté for a minute. Pour the tempering into the millet curd mixture and combine well.
  • Millet curd rice is ready to serve.
