Chicken Quinoa Salad

Ingredients:

  • Chicken Breast -50 gm
  •  Quinoa – 30g
  • Tomato -1/2 count (65 g)
  • Green Bell Pepper -1/4 count (30 g)
  • Onion – 3/4 cup (150 g)
  • Oil – 1 tbsp
  • Lemon Juice -1 tbsp

Energy: 260 kcal
Protein: 15.5g

Method:

  1. Soak Quinoa for 3-4 hours.
  2. Take a pan, add 2 cups of water and a pinch of salt. Add quinoa and cook until it is soft.
  3. Pressure cook the chicken for 15-20 minutes. Remove the lid and let it cool for a while.
  4. In the meantime, chop all the mentioned vegetables.
  5. Assemble everything together – in a bowl mix quinoa, chicken and chopped vegetables together, add seasoning and lemon juice according to taste.
  6. Garnish with fresh coriander.
