Chicken Quinoa Salad
Ingredients:
- Chicken Breast -50 gm
- Quinoa – 30g
- Tomato -1/2 count (65 g)
- Green Bell Pepper -1/4 count (30 g)
- Onion – 3/4 cup (150 g)
- Oil – 1 tbsp
- Lemon Juice -1 tbsp

Method:
- Soak Quinoa for 3-4 hours.
- Take a pan, add 2 cups of water and a pinch of salt. Add quinoa and cook until it is soft.
- Pressure cook the chicken for 15-20 minutes. Remove the lid and let it cool for a while.
- In the meantime, chop all the mentioned vegetables.
- Assemble everything together – in a bowl mix quinoa, chicken and chopped vegetables together, add seasoning and lemon juice according to taste.
- Garnish with fresh coriander.
