Handvo (Savory Lentil and Vegetable Cake)

- ½ cup chana dal (soaked 3–4 hours)
- ½ cup rice (optional)
- ¼ cup grated bottle gourd (lauki)
- 2 tbsp grated carrot
- 1 tbsp chopped spinach
- ½ tsp turmeric
- 1 tsp ginger paste
- Salt (minimal)
- ½ tsp baking soda)
- 1 tsp oil (for tempering)
- Mustard seeds & curry leaves for tempering

முறை:
- Grind-soaked dal and rice to a smooth batter; mix with vegetables, turmeric, ginger and salt
- Add water to get a thick but pourable batter; keep aside for 15–20 minutes for slight fermentation
- Heat a greased baking dish or non-stick pan
- Pour batter, add baking soda just before baking/steaming
- Steam for 15–20 minutes or bake at 180°C for 25–30 minutes until golden
- Prepare tempering: heat oil, add mustard seeds and curry leaves; pour over handvo
