Palak Chana (Spinach and Chickpea Curry)

  • 1 cup boiled chickpeas (kabuli chana)
  • 2 cups fresh spinach leaves (blanched and pureed)
  • 1 small onion, finely chopped
  • 1 small tomato, pureed
  • 1 tsp ginger-garlic paste
  • ½ लहान चमचा हळद पावडर
  • ½ tsp cumin seeds
  • ½ लहान चमचा धने पावडर
  • 1 tsp olive or mustard oil
  • Salt (minimal)
  • Water as required

पद्धत:

  • Heat oil in a pan and add cumin seeds; allow them to splutter
  • Add chopped onion and sauté until light golden brown
  • Stir in ginger-garlic paste and cook for 30–40 seconds
  • Add tomato puree, turmeric, and coriander powder; cook until the mixture thickens slightly
  • Add boiled chickpeas and mix well so they are coated with spices
  • Pour in spinach puree and stir thoroughly
  • Adjust salt and add a little water if needed for the desired consistency
  • Simmer for 5–7 minutes until flavours blend well
  • Serve warm with multigrain roti or a small portion of brown rice
