Quinoa Mushroom Salad
Ingredients:
Boiled Quinoa-30gm
Mushroom-100gm
Blanched Broccoli-20gm
carrot-10g
onion-10g
tomato-10gm
Capsicum-10gm
Cucumber-10gm
Olive oil-5gm
Lime juice-2 tbsp
Mint leaves-1 tbsp
Chili flakes- ½ tsp
Oregano-½ tsp
salt-as per taste
Nutritional Value:
Energy: 222.55 kcal
Protein: 10.1 gm
Method:
For Dressing, in a bowl add curd olive oil, lime juice, salt, chilli flakes, and oregano and mix well and keep it aside.
Take a pan, add 1 spoon of oil, add garlic and mushrooms to it, and sauté on low flame for 4-5 minutes. Keep it aside.
In a large bowl add boiled quinoa, mushroom, and all the sliced veggies, and mint leaves.
Now add the dressing to the quinoa bowl and toss the salad well.
Transfer into a serving bowl and serve immediately.
