Spinach-boiled Egg Roll

For the roti:

  • 1 multigrain roti (made from whole wheat + millet flour)

For the stuffing:

    • 2 boiled eggs, chopped
    • 1 cup fresh spinach, finely chopped
    • 1 tbsp chopped onion
    • 1 tbsp chopped tomato (seeds removed)
    • 1 tsp olive oil
    • 1 tsp ground flaxseed (optional)
    • ¼ tsp black pepper
    • A pinch of turmeric
    • A small amount of salt
    • A few drops of lemon juice

  • Heat olive oil in a pan
  • Add chopped onion and sauté until translucent
  • Add spinach and cook until wilted
  • Turn off the heat and mix in chopped boiled eggs
  • Add turmeric, pepper, salt, flaxseed, and lemon juice. Mix gently
  • Warm the multigrain roti
  • Place the spinach-egg mixture in the centre and fold into a wrap
  • Serve warm with yogurt, if desired
