Chicken Quinoa Salad
Ingredients:
Chicken Breast -50 gm
Quinoa – 30g
Tomato -1/2 count (65 g)
Green Bell Pepper -1/4 count (30 g)
Onion – 3/4 cup (150 g)
Oil – 1 tbsp
Lemon Juice -1 tbsp

Method:
Soak Quinoa for 3-4 hours.
Take a pan, add 2 cups of water and a pinch of salt. Add quinoa and cook until it is soft.
Pressure cook the chicken for 15-20 minutes. Remove the lid and let it cool for a while.
In the meantime, chop all the mentioned vegetables.
Assemble everything together – in a bowl mix quinoa, chicken and chopped vegetables together, add seasoning and lemon juice according to taste.
Garnish with fresh coriander.
