Boiled Eggs with Guacamole

Ingredients:

  • Avocado – ½ piece
  • Onion [diced] – 50 gm
  • Tomatoes [halved] – 50 gm
  • Capsicum [chopped] – 50 gm
  • Egg white [boiled] – 2 nos. (30gm)
  • Salt – to taste
  • Pepper – to taste
  • Jalapeno – minced (20g)
  • Basil leaves [chopped] – 1 tsp

Method:

  1. Boil the Eggs for 10 minutes. Peel and scoop out the yellow portions and keep it aside.
  2. Halve the avocados and remove the pits. Scoop the avocado flesh into a bowl, add chopped onions, tomatoes Jalapenos, salt pepper and squeeze fresh lemon. Mix with a fork, until the avocado is mashed, and the ingredients are combined.
  3. Replace the yellow portion with Guacamole dip. Garnish with fresh basil leaves.
